Thumbprint Cookie Recipe
Ingredients:
1 Cup - Unsalted Butter
1/3 Cup - Sugar
1/3 Cup - Light Brown Sugar (Tightly Packed)
1 Large Egg Yolk
3/4 Tsp - Vanilla Extract
2 1/4 Cups - All Purpose Flour
2 Tsp - Corn Starch
1/2 - Salt
1/2 Cup - Sugar or Finely Chopped Nuts (For Rolling)
1/3 Cup - Raspberry Jam
Steps:
1. Beat butter until smooth and creamy - Add sugars and slowly increase speed to medium-high
2. Add egg yolk and vanilla - Beat well
3. In spertate bowl - mix flour, cornstarch and salt
4. Gradually add flour to wet ingredients - Dough = Dry + Crumbly
5. Scoop cookie dough into 1 Tablespoon balls - Roll well (No cracks or seams)
6. Roll in sugar (or nuts) - Place on cookie tray 2 inches apart (use wax or parchment paper)
7. Use thumb to make indent in middle of cookie
8. Transfer to freezer for 30 minutes.
9. Prehead oven to 375 degrees - Put jam in microwave for 10 seconds
10. Spoon jam into each cookie indent
11. Bake cookies for 11 Minutes or until edges are golden brown
